Pancakes make for a fun weekend breakfast! Buckwheat flour contributes additional fiber, minerals, and a subtle nutty flavor. Serve alongside some eggs or greek yogurt for protein to make a complete and balanced breakfast. Consider topping with fresh fruit instead of just syrup to reduce the sugar content and add more vitamins and fiber. Makes about 4 large pancakes or 8 small pancakes.
