Egg Bites: A Complete Breakfast for People on the Go

These egg bites are considered a "complete" breakfast because they include a protein (eggs), a high-fiber carbohydrate (quinoa), and a little fat (from the egg yolks). And it is perfect for People On The Go because it can be made ahead of time then reheated the morning-of, and it is all in one convenient, portable bite. Any veggies can be used here: try spinach or chopped fresh herbs instead of kale, or sub onion and tomato for peppers and mushrooms. Using frozen or pre-chopped veggies can make this already easy meal a total cinch.
