The Heimerdinger Foundation's Vegan Ranch Dressing

The Heimerdinger Foundation is a local non-profit that makes nutrient-dense meals for people facing cancer. They also provide nutrition education, host events featuring local chefs, and work with volunteers of all ages, including students. You can find recipes for many of their recent and popular dishes on their website. This one for their vegan ranch dressing is a favorite because it is easy to make, uses ingredients you likely already have in your pantry, and the ingredients can be tweaked and customized in so many yummy ways.
The Heimerdinger Foundation's Vegan Ranch Dressing:

Ingredients:
½ cup organic avocado mayo
1-2 tsp organic unsweetened almond milk (as needed to thin out dressing)
½ tsp apple cider vinegar
1 clove garlic, minced into a paste
1 tsp organic onion powder
1 tsp organic garlic powder
1 organic scallion, minced
2 tsp finely minced parsley
Sea salt and organic black pepper to taste
Directions:
Add all ingredients to a mixing bowl. Stir to combine.
Season to taste with salt and pepper
Ideas for customizing:
other fresh herbs such as dill, basil, or chives
1 teaspoon of nutritional yeast for a cheesier flavor
1 teaspoon fresh squeezed lemon juice for added brightness and acidity
1 teaspoon hot sauce for buffalo ranch
1 tablespoon minced cucumber for tzatziki ranch
The Heimerdinger Foundation provides free, home-delivered meals to patients undergoing cancer treatment (and their families/caregivers) that reside in Davidson County and some parts of Williamson County.
