Yogurt with Figs and Honey Balsamic Drizzle

Figs are one of my favorite foods, and they are in season right now (late summer/early autumn). This particular variety is an Adriatic fig, sometimes called a white fig. It's sweet flavor and jammy texture pair well with plain yogurt. This is great as a breakfast or snack.


Ingredients

  1. 3-5 fresh figs (any variety)

  2. 3/4 cup plain low-fat yogurt or greek yogurt

  3. 1-2 tablespoons ground flax seeds/flax seed meal

  4. 1 teaspoon honey (optional)

  5. 1/4 teaspoon balsamic vinegar or balsamic reduction (optional)


Directions

  1. Slice figs into quarters.

  2. Add yogurt and flaxseeds to a bowl. Mix thoroughly to combine.

  3. Add figs to yogurt bowl.

  4. Drizzle yogurt and figs with honey and add a few splashes of balsamic, if desired.


Yogurt is a great source of protein, and figs are a great source of fiber- and vitamin-packed carbohydrates. When protein and carbs are eaten together like this, it improves blood sugar control, provides sustained energy, and helps us feel satisfied from our meals.


I have been adding ground flaxseeds to yogurt for years. This adds fiber and omega-3 fatty acids, two things our body loves, but that are not found in yogurt. The flaxseeds do add a little texture, which I love! I understand that might not be for everyone, but I encourage you to at least try it a couple times! And, although it certainly does not need it, I added a little drizzle of honey and balsamic vinegar for some extra flavor.
