This is a great to make the night before a busy day to ensure you have a healthy and satisfying lunch. For a lighter lunch, serve with a side of fruit or applesauce; or something crunchy, like carrots, crackers, chips, or popcorn. If a bigger meal is needed, serve with a side of broth or soup, a side salad, or a carb/ fat pairing like apple and peanut butter, pears and cheese, or chips and guacamole.
