This is an easy recipe with minimal cleanup. It's great to make in bulk and use throughout the week in salads, soups, or tacos, just to name a few. After chicken rests for 2-3 minutes, use a knife to remove any pieces that are overly charred. Allow chicken to cool before storing in a sealed container in the fridge. Properly stored chicken is good for up to 4 days.
Ingredients:
Boneless, skinless, chicken breast, about ¼ - ⅓ lb per person
Salt and Pepper as desired
High-heat oil or cooking spray
Directions:
Preheat grill to high heat
Pat raw chicken breast dry with a paper towel
Season chicken breast with salt and pepper as desired. Lightly spray or drizzle with oil.
Place chicken on the grill and lower the heat to medium/medium-high heat (around 400˚F)
Cook on one side for 5-7 minutes with the lid closed
Flip and cook on the other side for 6-8 minutes with the lid closed.
Remove chicken from grill and allow to rest for 2-3 minutes. A thermometer should read 165˚F.
