Simple Grilled Chicken Breast

This is an easy recipe with minimal cleanup. It's great to make in bulk and use throughout the week in salads, soups, or tacos, just to name a few. After chicken rests for 2-3 minutes, use a knife to remove any pieces that are overly charred. Allow chicken to cool before storing in a sealed container in the fridge. Properly stored chicken is good for up to 4 days.


Ingredients:

Boneless, skinless, chicken breast, about ¼ - ⅓ lb per person

Salt and Pepper as desired

High-heat oil or cooking spray


Directions:

  1. Preheat grill to high heat

  2. Pat raw chicken breast dry with a paper towel

  3. Season chicken breast with salt and pepper as desired. Lightly spray or drizzle with oil.

  4. Place chicken on the grill and lower the heat to medium/medium-high heat (around 400˚F)

  5. Cook on one side for 5-7 minutes with the lid closed

  6. Flip and cook on the other side for 6-8 minutes with the lid closed.

  7. Remove chicken from grill and allow to rest for 2-3 minutes. A thermometer should read 165˚F.
