Mango Salsa

This simple recipe packs a lot of flavor and nutrition. It's rich in copper, folate, and Vitamin C. The tart lime balances out the sweet flavor of the mangoes. Serve this in a taco, on grilled pork chops or fish, as a salad topping, or mix with grains for a heartier side dish. This recipe makes about 2 cups of salsa. Store leftovers in a sealed container in the fridge for up to 3 days.
