Chia seeds are small but mighty. These tiny seeds are packed with protein, fiber, omega-3 fatty acids, and a whole host of beneficial vitamins and minerals. Chia seeds can soak up liquid and flavors to make a "pudding" similar to tapioca pudding. This makes for a delicious snack or light breakfast that can be prepared ahead of time and ready to grab during your week. This recipe can be customized to your liking by adjusting the serving size, using a different liquid (milk, almond milk, etc.), adding spices (cinnamon, turmeric, etc.), or changing up the toppings (granola, jam, yogurt, etc.).
