Chimichurri - An Herby Green Sauce

Chimichurri is an herby green sauce that originates from Argentina. Traditionally it contains parsley, oregano, garlic, chili peppers, oil, and vinegar or lemon juice. You can use any combination of fresh herbs, and I will often make this sauce when I feel like I need to use up some fresh herbs. This goes well on steak, chicken, fish, eggs, or mixed in with yogurt or hummus to form a dip. You can keep the sauce in the fridge for up to a week with the herbs submerged in olive oil in a sealed container.



Ingredients:

1 bunch flat leaf parsley, washed, dried, and finely chopped

1/4 of a red onion or 1 shallot, minced

1 large garlic clove, grated or minced

1 teaspoon chili pepper flakes

1/4 teaspoon salt

1/4 cup extra virgin olive oil

3 tablespoons red wine vinegar


Directions:

Add all ingredients to a bowl and mix well. You can use a food processor to blend further, if desired.
